  • 1 cup grape tomatoes
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 lb ground turkey

  • ½ cup almond flour
  • ¼ cup finely grated Pecorino Romano or Parmesan cheese

Instructions

1. Prepare the Oven and Vegetables

Preheat oven to 425°F.

Lightly spray a sheet pan with cooking spray.

Add broccoli florets and tomatoes to the pan, then season with salt and pepper.

Drizzle with 2 tablespoons of olive oil and toss until evenly coated.

Place the sheet pan in the oven and set a timer for 15 minutes.


2. Prepare the Meatballs

While the vegetables roast, prepare the meatballs.

In a large bowl, season the ground turkey with ¾ teaspoon salt.

Add minced garlic and almond flour, then mix until everything is combined.

Be careful not to overmix, as this can make the meatballs less tender.
